Julien and Sonia Gatillon give us an exclusive look at their upcoming project in Megève. Anata will relocate to make way for a new 12-seat counter dedicated to a more sophisticated omakase experience, while Vos will take up residence upstairs. The opening is scheduled for November 26.

In Megève, Julien and Sonia Gatillon gave us an exclusive preview of their upcoming project: Vos, a new restaurant set to open on November 26, along with an evolution of their Japanese counter-style restaurant, Anata.

Omakase 2.0

The opportunity to take over the space next door to their restaurants has opened up new possibilities. Anata will move there to offer a 12-seat counter, where the two chefs already on staff will each work facing the guests. The omakase experience will take on a more refined dimension: sashimi sliced to order, nigiri prepared right before guests’ eyes and served, piece by piece, just as in Japan. Raw fish, marinades, and broths will set the tone for this experience.

“Vos”—which means “you” in the local dialect, the couple explains—will take over the vacated floor. The menu will feature a selection of ingredients from which guests can choose to create their own meals, with the option to let the kitchen decide. Each plate will be tailored to the number of courses selected. The French counter “Vous” will continue to operate as usual. The meal will be tailored to the number of courses selected.

Julien is approaching this new beginning with enthusiasm, while Sonia has the apprehensions typical of any investment. Both will be able to rely on a team that already has their full confidence.
