It was her Burgundian grandfather who instilled in her a love of wine, a field to which Laurine Doulcet naturally turned by training as a sommelier. In 2016, she collaborated on a short-lived project that involved serving natural wines, mainly from Switzerland and Haute-Savoie. A turning point! She realized that the labels she was used to drinking no longer gave her the same emotions.
Geneva then became the obvious choice. Without much conviction, Laurine started with the palace option, but the uniforms and rigid manners associated with it did not appeal to her. She pushed open the door of Bleu Nuit, where she was lucky enough to have carte blanche for over two years. After the health crisis, she landed at Mifood Miraisin, a place she particularly likes for its singularity and the wine selection she knows perfectly well. She took over the Table de MiFood MiRaisin room with panache, adding a touch of soul.
