A new chef and a few more secrets. At the Beau-Rivage Palace, Simon Quétineau is taking the helm of the fine-dining restaurant, whose next chapter will be unveiled in the spring of 2027.

The Beau-Rivage Palace in Ouchy has chosen its next chef. Simon Quétineau will succeed Anne-Sophie Pic at the helm of the gourmet restaurant at the Lausanne palace, which is scheduled to reopen in the spring of 2027. His career has included stints at L’Atelier Joël Robuchon, as well as working alongside Christophe Bacquié and Michel Guérard.

“Fine Dining”

To announce this arrival, the hotel has coined the phrase “Belle Cuisine.” Behind these words lies the promise of cuisine rooted in tradition, heritage, and creativity, with a focus on artisans and producers from the Lake Geneva region—an area the chef knows well, as the press release notes.

As for the rest, we’ll have to wait and see. Neither the restaurant’s name nor the details of its culinary concept have been revealed at this stage. The luxury hotel plans to unveil this new dining experience in the spring of 2027 and will not grant any interviews with the chef or the management team prior to that announcement. The team has been announced. The dining experience remains to be discovered.
