Clément Trochu at Cheval Blanc
Clément Trochu began his career as a seasonal worker in Ossegor and La Clusaz. That’s how he discovered our beautiful region. After trips to Australia, Southeast Asia and Latin America, he arrived in Geneva in 2016 to establish himself. It was at the Poolside de l’Intercontinental that his Geneva path began, taking him all the way to Fiske Bar, where he became assistant manager to a certain Pierre Lelièvre. At his side, he developed a love for the world of wine, and more specifically for natural wines.
In 2019, in search of autonomy, he seized the opportunity to manage the Jardins du Rhône before taking over the MiFood MiRaisin establishment in association with Martin Reggiani. The duo retained the soul of the place, but Clément thirsted for new challenges and left the Eaux-Vives adventure. After a period of consulting and project exploration, he crossed paths with the new owners of Cheval Blanc in Vandoeuvres. The magic happened and he fell in love with the place and the people around him. Since April, we’ve had the pleasure of welcoming this biodynamic enthusiast back to our dining rooms!
