Bastien Zimmermann at Sachi

Bastien Zimmermann was predestined for a career in sport until an injury put his future in doubt. Undaunted, he decided to travel to England, where he met the bar manager of the London St James. This meeting was to change his career path, as he learned the basics of the trade and the language of Shakespeare. On his return, he headed for Martigny to attend the Vatel Hotel Management School, where he obtained his baccalaureate and was finally able to pursue his passion for this profession.

Even before completing his studies, he had already signed a contract with the Four Seasons Hôtel des Bergues in Geneva, and from there followed a brilliant career path… from chef de rang to assistant manager of the Izumi restaurant, he climbed the ladder and continued in the same type of catering business all the way to Dubai as restaurant manager. During this Dubai escapade, Mitsuru Tsukada, aka chef “Mitsu”, was busy developing his Japanese universe with the Sachi restaurant at the Mandarin Oriental hotel in Geneva.

The two colleagues then reformed their duo and even completed the team with Thomas Bocik and Loïc Duarte, respectively head sommelier and assistant manager. For a year now, they’ve been a resounding success. The secret? A close-knit team who work together on a daily basis in a spirit of exchange and trust. As Bastien Zimmermann so aptly puts it, “customers come for the food and come back for the service”, so come and enjoy a Japanese encounter that will make you want to come back for more.
