Behind the institutional appearance of Chez Calvin lies one of Geneva's liveliest venues. A vision driven by Fabian Affentranger, who combines the highest standards of service with a keen sense of timing.

Fabian Affentranger has a kind of quiet lucidity. Not the kind that theorizes restoration with concepts or trends – a word we loathe, by the way – but a lucidity that allows us to observe, adjust and move forward. For him, it’s more like a paradigm shift. A slow but clear shift in the way restaurants are experienced, frequented and desired.

2025, the year of refocusing

At Calvinits Eaux-Vives restaurant, this changeover meant a return to basics. After years of experimentation – chef residencies, guest kitchens, conceptual summers – the year 2025 marked a refocusing. An almost instinctive decision: to return to doing what the house does best. An assertive Parisian brasserie. A clear cuisine. And above all, a fully asserted festive identity.

Calvin’s festive spirit was never premeditated. It’s something that’s built up by capillary action: a playlist, a volume that’s turned up, friends who stay, evenings that stretch out. For a long time, Fabian Affentranger sought the balance between those who wanted to talk and those who wanted to vibrate. Since last autumn, he has made up his mind. Here, music is part of the language. And, paradoxically, a major investment in sound now enables the volume to be better maintained and amplified over the course of the evening.

Less but better

This ability to decide, and then take responsibility, says a lot about the restaurateur. With him, there’s no nostalgia for the way things used to be. Customers don’t spend less, they spend differently. They go out less often, but better. It’s up to him to make each visit sufficiently desirable to make the moment special.

The obsession remains service. Recognizing regulars. Pampering them. Relying on a loyal team, some of whom have been with us since we opened. Almost nine years already. A short decade that has also taught Fabian not to exhaust himself against the uncontrollable: cancellations, reduced tables, changing behavior. The energy has to stay where it counts… on those sitting in the room.

No club, no restaurant

In a Geneva sometimes described as all restraint, Chez Calvin acts as a buffer space. Neither a club, nor a simple restaurant. A place where the evening can start at the aperitif and end at the bar, without necessarily waiting until two in the morning for something to happen. A continuous, almost organic experience that also responds to a post-Covid generation that hasn’t learned the codes of classic nightlife. This vision also feeds the future. An enlarged terrace, transformed into a summer oasis. And, in the background, the idea of exporting Calvin’s DNA elsewhere, notably in the mountains, with an advanced project that could see the light of day for the next few seasons.

What’s striking about Fabian Affentranger is not only his ability to turn a house around, but also his unwavering adaptability. Testing, sometimes making mistakes, then coming back to what makes sense. Understanding that, in contemporary catering, consistency has become stronger than novelty. Basically, Chez Calvin is Fabian Affentranger’s way of telling the story of Geneva: a city that moves forward in small steps, testing its limits, but which, when it finds its rhythm, creates places where people come to eat, drink, dance, talk… and sometimes all at the same time.
