At Châteauvieux, heritage is shared
There are houses that leave no one indifferent. Houses that have stood the test of time without ever betraying their character, with the discreet panache that only places with soul can cultivate. Domaine de Châteauvieux is just such a place. It’s impossible to survey the decades of Geneva’s gastronomy without making a stop here, without feeling the weight of time, the seasons, the services, the silences too. Because to endure is to accept the rough edges. Who doesn’t?

A table, a landmark
Dear to Geneva, dear to the Genevois, dear to the Romands, this institution located on the heights of the village of Satigny is also dear to all gourmets passing through our city of Calvin, who come for dinner or lunch in search of the good and the beautiful. A table as a landmark, a fixed point in a world that moves fast, sometimes too fast. Here, we remember that gastronomy is first and foremost a story of transmission, rigor, generosity and emotion.
The exchange takes place in the heart of the kitchens, around the stoves, and takes the form of a free conversation between Philippe Chevrier, François Periers and Manuel Pereira, the new duo who have been working alongside the chef for the past year and a half. It’s a no-holds-barred discussion, in which they look back on the gradual transition of the house: respecting forty years of history while infusing a more contemporary vision, carried forward by two younger chefs deeply aligned with the DNA of the place. An evolution thought out over time, faithful to the spirit of the house, without sudden rupture or denial.

Sugar control
The guiding principle is clear and unambiguous: product first, mastery of the classics, taste as compass. The cuisine is evolving in small, almost muted steps. Portions are more accurate, plates more elegant and legible, dressings purer, free of all artifice, without ever yielding to effect or gadgetry. When it comes to pastries, Manuel Pereira follows the same logic: to revisit the great classics by lightening them up, mastering sugar, textures and exceptional raw materials, without ever betraying their essence. “Classics are not the past: they’re a foundation and a requirement.
Very quickly, the discussion moves beyond the plate to focus on the human element. The importance of the team, of transmission, of loyalty. Châteauvieux is above all a house of regulars, built over the long term, with customers who have accompanied its history and to whom we have had to listen. “Customers are changing: they want a little less, but they want to taste better. It’s up to us to refine the dishes, rework the elegance and, above all, make the plates more legible”, remarks François Periers. The transition was made with them, respecting their expectations, taking the time needed to find the right balance, assert a common identity and create a solid collective dynamic.

Foolproof determination
Beyond the kitchen, heavy investments have been made. Stoves, crockery, pastry-making, bakery, chocolate-making: all elements often invisible to the customer, but essential to the precision of the gesture and the quality of the result. Domaine de Châteauvieux asserts its economic independence, without patrons, and assumes a measured but very real ambition: to develop the house, preserve what it has built and aim, without obsession, for recognition commensurate with the work accomplished.
Finally, we look at the reality of the business. A tense economic context, changing consumer habits, fragile balances. But there’s also a conviction that remains intact, one that’s almost asserted: to work first and foremost for our customers, for the pleasure of a job well done, in a house where soul, simplicity and sincerity remain the true foundations. At Domaine de Châteauvieux, we continue to move forward in this way, without unnecessary noise, but with a determination that commands respect.
