Armel Bedouet, ten years of unadulterated pleasure

Ten years after its opening, L'Aparté, Armel Bedouet's Michelin-starred restaurant, continues to evolve: varied menus, a creative team, direct contact with guests.

2026. A new season, a new year. And a restaurant that is now firmly established in the Geneva, French-speaking Switzerland and national gastronomic landscape. L’Apartéalready ten years old. And at the center of the table: Armel Bedouet, in top form, very much at home in his chef’s hat, very much at home in his kitchen.

One more point

The end of 2025 was intense. Very intense. An extra point in the GaultMillau, the title of Chef Romand de l’année 2026, a new clientele attracted by the coveted 18th point. The curious came to feast, the regulars remained faithful, and the dining room filled to capacity. “We had a lot of work to do at the end of the year,” he recalls. And for Armel Bedouet, these words are a good sign.

He sees 2026 as a year of continuity. Maintain what has been built, keep moving forward, work with fish and fine produce, and keep the pleasure intact. Pleasure, in fact, has returned even stronger with the change of scenery. New walls, new energy. A creative impulse, a joyful impulse. Seeing customers happy in this new setting counts for a lot. And it says a lot about the direction that’s being taken, that accompanies and supports the objectives.

Youth menu

Since the star was awarded in 2020, teams have been coming to learn, to grow and to stay. Here, creativity is not restricted. The young chefs propose, test and invent. The “ephemeral” lunch menu, for example, is often their playground. “We taste together, make adjustments, and sometimes an idea born there ends up later in a great evening dish,” explains the chef. The kitchen moves forward as a team.

At L’Aparté, there are no signature dishes. Voluntarily. Because Armel Bedouet doesn’t want to bore. Because he wants to surprise. Four menus a year, menus that evolve with these ephemeral sequences that change every week. Even a customer who comes three times in the same week can eat three different menus. We’re all about made-to-measure.

Honoring the customer

And then there’s the gesture that has become a signature without being one: Armel Bedouet coming out, at each course, to explain, tell, greet each table, each guest. It was an idea inspired by Paul Muller, former CEO of the Manotel group, almost as a challenge. Difficult at first, almost unnatural for this reserved cook. Today, it’s a pleasure. A direct link. Customers talk, criticize, suggest. He listens, tastes, adjusts. Sometimes he changes, sometimes he holds firm. But he’s always moving forward.

2026 will also be the company’s tenth anniversary, in October. “Ten years; that goes by in thirty seconds,” he admits. Ten years of evolution, work and encounters. An opportunity to look back, perhaps to bring back a few dishes from the past – a rare occurrence here – without ever falling into routine. No fixed nostalgia, just winks.

A meal, a moment

The global context is a cause for concern. Geopolitics, the economy, changing consumer habits. Armel Bédouet has his head in the sand. But he is charting his course. No cheap cooking, no denial. Just constant attention to detail: remaining accessible in a working-class neighborhood, respecting his customers, respecting his products.

In early January, the room was already filling up. Some departments full, others more fragile. Just like everywhere else. But the momentum is there. And above all, the desire. Ten years on, Armel Bédouet isn’t trying to outshine the rest. He’s looking to do the right thing. To create, to share, to welcome. To ensure that no table is forgotten. To ensure that every meal is a moment. At L’Aparté, cooking doesn’t repeat itself. It moves forward. With him. With them. With you.
