As the year draws to a close, Café des Banques chef Yoann Caloué is on a roll! Between his open-plan table d’hôtes, his cosy dining room and his private salon on the second floor, the chef is on all fronts! Offering a technically accomplished and devilishly gourmet cuisine, this week he invites us to taste a lobster puce accompanied by his lobster, pomelo and avocado remoulade.
