When La Colombe meets the Beau-Rivage
It’s a meeting where youth shines. Laura Paccot, one of the new generation at Domaine La Colombe in Féchy, and chef Mathieu Croze. On March 26, 2026, the Beau-Rivage Genève will host a deliberately intimate dinner – for ten guests only – designed as a direct exchange between vine and plate. The idea is to build a gastronomic journey where each dish responds to the nuances of the estate’s wines, known for their purity, mineral tension and biodynamic approach, which has been in place for over twenty years. The fourth generation to head the family estate, Laura Paccot today embodies a discreet but determined revival of La Côte vaudoise: viticulture without chemical inputs, natural yeasts, precision work and respect for living organisms as a guiding principle. In the kitchen, Mathieu Croze draws on the richness of the local terroir to build a score in five acts – from arctic char to veal to dessert – with each dish designed to resonate directly with a specific wine from the estate. May the lucky ones rejoice…
