Cuvée du Lion d’Or, between cuisine and vineyards
For the past three years, chef Romain Desvenain has been developing an exclusive cuvée in the continuity of the work initiated by Stéphane Reynaud with Sébastien and Maxime Dupraz, of the Caves des Chevalières in Soral. More than a partnership, it’s a human story: today, the winemakers are part of the chef’s inner circle, right down to the moments of life. Each year, the team travels to Soral to help develop two wines, one white and one red, designed for the bistro table. The current vintage blends 60% Riesling and 40% Chasselas on the white side. The reds are balanced around 50% Gamay, 30% Merlot and 20% Syrah. As always at Bistrot du Lion d’Orthe story doesn’t stop with the liquid. The label, currently under design, will carry its own story, in this artisanal logic where every detail counts. The cuvée will remain available exclusively at the bistrot, like a discreet signature, but with a profound sense of identity.
