In Florissant, Sesflo begins a new chapter with Simon Varaine in the kitchen, closely accompanied by Cyrille Azevedo, now executive chef of the Maniatis group.

The good news continues to roll in on Geneva’s gastronomic scene. And among the names that are quietly but steadily making headway, Cyrille Azevedo clearly deserves a closer look. Now Executive Chef of the Maniatis Group, he is responsible, albeit from a distance, for the development of the menu at Sesflorecently taken over by the team at 21 Club and Moon, in Eaux-Vives. This is yet another milestone in the chef’s career, as he continues to climb the ladder without ever making too much noise. But the real novelty also lies in Sesflo’s kitchen. Having left the Arakel restaurant, Simon Variane now takes sole charge of the stoves. Cyrille Azevedo is particularly enthusiastic about this arrival, and is determined to accompany the young chef in this new adventure. The objective is clear: to pass on, support and develop a neighborhood address that has always retained a loyal clientele at the start of the Route de Florissant. Together, the duo hope to offer a generous and accessible cuisine, capable of breathing new life into this brasserie, which deserves to be rediscovered.
