Shiso bows out

After five years of twisting the burger between Geneva and Zurich, fusion address Shiso is pulling back the curtain. Since 2020 in the banking district, then in Zurich from 2022, Shiso wanted to be more than just a restaurant: a place for meetings, ideas and culinary freedom. But reality has caught up with the dream. Rising rents, more expensive raw materials, energy, staff shortages, changing habits: the equation became too heavy. In Geneva, the banking district has changed tempo since the pandemic. Lunchtime is no longer an automatic appointment, and the momentum has faded with time. In Zurich too, despite a loyal clientele, staying the course is too delicate a balancing act. Shiso is leaving, but leaves a mark. That of a creative burger, a lively place, a small community that liked to eat differently. And a reminder that even the most beloved projects are not immune to an industry under pressure.
