SEOK, the Korean restaurant at the Park Hyatt
Korean chef Mingoo Kang is moving to Paris. As the head chef of Mingles, his three-Michelin-starred restaurant in Seoul, he is opening SEOK at the Park Hyatt Paris-Vendôme. The name of this new restaurant pays tribute to his father. There, Mingoo Kang serves cuisine deeply rooted in his culture and childhood memories, without seeking to create a fusion. Korean fundamentals—fermentation, balance of flavors, textures, and temperatures—are combined here with carefully selected French ingredients.
Small plates
The meal is put together freely using small plates, dishes to share, banchan, and condiments. Among the featured dishes: crispy yam inspired by street food, a chicken duo, and Angus beef galbi that you can wrap yourself in a lettuce or perilla leaf. Designed by artist and architect Hugo Toro, SEOK’s interior features a dining bar, an open kitchen, a dining room bathed in amber lighting, and a private dining area. A Korean culinary experience served on the plate, set in a Parisian setting.
