Relais Bernard Loiseau, eternal renewal
Under the impetus of Bérangère and Blanche Loiseau, accompanied by chef Louis-Philippe Vigilant, the legendary restaurant La Côte d’Or, within the Relais Bernard Loiseauunderwent a sensitive renaissance. The challenge was not to transform, but to adapt… to adapt the spaces to the new inspiration in the kitchen. A former coaching inn transformed into an exceptional inn, the place cultivates a rare luxury: that of naturalness. Exposed beams, restored terracotta floor tiles, solid oak and whitewashed walls. The AMD firm, headed by François Damidot, worked with the material as one works with a product: with respect. Sublimating the existing rather than masking it. Three atmospheres emerge from this gentle transformation: a winter garden, a glass rotunda opening onto the garden, an enveloping, almost secret Boudoir, and a Balcony, a plant immersion. Gastronomy now extends beyond the main dining room, with a tasting cellar designed as an ode to Burgundy terroir, a table d’hôte in front of the fireplace and Bernard Loiseau’s library, and the chef’s table facing the pass, at the heart of the brigade. Each year, the Relais continues to embellish its history. A new restaurant will open within the spa in spring 2026, and another establishment has already been announced in Metz. The house moves forward, true to its DNA.
