A former pastry chef at Crissier's Hôtel de Ville restaurant, Nicolas Flandin is now blazing his own trail in Lausanne, and is committed to the Carac Rose cause.

September 5th, Nicolas Flandin raised the curtain on his first patisserie, nestled at 12, avenue de Collonges, at the foot of the Palais de Beaulieu. A luminous setting where rigor, creativity and a taste for sharing are combined. Trained by Gérald Passedat, his approach is rooted in the local and open to the world. Fruits from the Lausanne market, chocolates from Madagascar, exceptional vanilla: his creations play between terroir and travel, between tradition and audacity. Here, no cookies or sweet snacks, but signature pieces, such as her revisited caracs with colorful glazes – tart blueberry, floral pear or intense chocolate – that confirm her style. And from October, the Flandin house will be decked out in pink. The chef joins the national campaign Carac Rosecampaign, which raises awareness of breast cancer prevention through an emblematic pastry. For the occasion, the traditional green Carac has been turned candy pink, a tender nod to femininity. Each Carac Rose sold will enable CHF 0.50 to be donated to seven partner associations in French-speaking Switzerland, active in supporting patients and promoting well-being during the disease.
