Matthias Marc, back to his roots

After seven years of shaping the identity of Substance restaurant, in the XVIᵉ arrondissement of Paris, Matthias Marc announces his departure. The chef will serve his last table on December 31, 2025, putting an end to an adventure marked by a Michelin star obtained in 2023 and a cuisine deeply nourished by his Franc-Comtois roots. In an emotional message, the chef recalls a founding house of sharing, rigor and conviction. Today, however, the desire for change is gently taking hold: to get back to basics and imagine a more personal project. Matthias Marc is now heading for the Doubs region of Franche-Comté, where he is preparing to open his next address in summer 2026, alongside his wife and business partner Hanna Marc. A return to his roots for a chef who has chosen to pursue his path far from the hustle and bustle of Paris, without ever denying the imprint left by Substance.
