Partnered since 2018 with Laurent de Gourcuff in the Apicius adventure and then that of Le Laurent, chef Mathieu Pacaud is today ending his collaboration with Paris Society. A transition that opens a new chapter for the Parisian chef.

Some gastronomic adventures are written in cycles. For Mathieu Pacaud, one of these began in 2018 when he teamed up with Laurent de Gourcuff to take over Apiciusan elegant Parisian restaurant on rue d’Artois. A few months later, a pandemic shook up the world’s catering industry. Despite the storms, the company held firm, thanks to its teams and an unwavering desire to keep this profession alive. In 2022, a new phase began with the takeover of Le Laurent, a historic institution on the Champs-Élysées, alongside the Paris Society. Today, after several years of intense collaboration, Mathieu Pacaud, Paris Society and the Accor Group have decided to end their partnership. The chef now wishes to pursue a more personal path, with places that fully embody the vision of a chef: free, lively and sincere homes. For him, the story continues with Apicius, which he considers one of the finest restaurants in Paris. A new dynamic is already in the works. As he says in an Instagram post: in this business, new pages are often the most beautiful to write.
