Lucas Desbiolles is leaving Table Brute
After several years at the helm of the kitchens at Table Brute, Lucas Desbiolles has decided to take a break to step back and reflect before determining the next step in his career. This decision is, above all, a personal one. After many years marked by the intensity of service and the demands of the profession, Lucas Desbiolles now feels the need to take a breather. “It’s time for me to put down the knives for a while to think about future projects,” he says. He already has several offers on the table, though he hasn’t decided on a specific direction yet.
However, the chef is leaving Table Brute with mixed emotions. He would like to thank everyone who contributed to this adventure, particularly his two kitchen colleagues, Raphaël Da Costa and Loïc Noumedor, whose essential role in the day-to-day operations he highlights. He also extends his gratitude to Paul Keenan, who placed his trust in him from the very beginning.
At Table Brute, business continues as usual. During the summer, the chef’s responsibilities are shared among the kitchen staff. The restaurant has not yet announced the identity of his successor or any potential changes to the menu. For Lucas Desbiolles, this hiatus is above all a time for reflection. It’s a deliberate break, with the intention of returning, when the time is right, to a project that reflects who he is.
