La Chaumière… love, the inn and the star
There’s a lot of emotion in the video posted on LinkedIn by chef Serge Labrosse and his wife Els. Ten years have passed since the duo took over La Chaumièrein Troinex, with the profound desire to turn it into a gourmet lifestyle. It was an audacious gamble: selling the family home to acquire this charming country inn. When the chef put the question to his wife, the answer was a resounding yes! A proof of love and absolute confidence. Ten years later, this decision still resonates as the founding act of a two-part entrepreneurial adventure.
Their ambition? To modernize without distorting. To make accessible without trivializing. To preserve the spirit of the auberge while maintaining the high standards of haute gastronomy. The Michelin star, obtained at the time, was the reward for this work. A reward, to be sure. But also a permanent responsibility. The pressure, the short nights, the obsession to keep up. Keeping the star requires as much energy as winning it. This tension feeds rigor, sharpens gestures and reinforces humility.
To celebrate this decade, an anniversary menu pays tribute to those who have shaped La Chaumière. Teams past and present, both in the kitchen and in the dining room, have left their mark. Each dish recounts a stage, an encounter, an evolution. Among these, the cardoon and truffle risotto stands out as a symbol. The cardoon, a local product dear to the chef, is combined with a technical mastery that is claimed with passion: “The best risotto in the world”, according to his wife. This is not just an anniversary. It’s confirmation that a vision driven by trust, hard work and love can write great pages in Geneva gastronomy.
