François Mikulski at Café des Banques

Visit Café des Banquesin collaboration with Cave Royalean exceptional evening will take place, in the presence of winemaker François Mikulski. Established in Meursault since 1992, Mikulski has established himself as a winegrower with his own distinctive signature. His chalk labels are revealing: nothing ostentatious, everything precise. In the glass, the same line emerges, without make-up, carried by a taut minerality and pertinent purity. Opposite him, chef Yoann Caloué composes a made-to-measure menu, designed to be in perfect harmony with the selected wines. Each plate follows the contours of the Côte de Beaune wines, without dominating them. From Meursault “Meix Chavaux” to premier crus “Les Poruzots” and “Les Charmes”, via a Volnay “Santenots du Milieu”, the tasting builds in intensity, punctuated by high-flying dishes: tuna ventrèche with iodized accents, sea bass and shellfish, poultry with morel mushrooms, to a smooth finish.
