First notes from Florent Pietravalle at Villa La Coste
Now we know a little more about the arrival of Chef Florent Pietravalle at the head of the kitchens of Restaurant Louison, the gourmet restaurant at the Villa La Coste. Villa La Coste. After a successful stint at La Mirande in Avignon, the chef has set down his knives in this discreet estate nestled a stone’s throw from Aix-en-Provence, in the heart of a spectacular landscape of vineyards, olive groves and umbrella pines. The chef takes the time to observe and immerse himself in the place: vegetable gardens, wild gatherings, herbs, flowers, olives and honey become the first notes of his new gastronomic score. Right from the start, he asserts his Provençal heritage, but rereads it with a resolutely contemporary eye. A mouclade revisited with grilled oysters, an aigo boulido transformed into a rock fish consommé with umami accents, and a mesclun treated as a veritable culinary manifesto already set the tone. Enough to make our mouths water. And above all, to make us want to discover all this very soon – ideally before the summer of 2026.
