For one evening, the Auberge de Dardagny brings together chef Fabio Stridi and winemaker Stéphane Gros for a dinner where the wines tell as many stories as the dishes.

In Dardagny, it’s not just the vines that will be attracting attention on June 25. For one evening, the Auberge de Dardagny will become the setting for a meeting between a chef who loves to entertain and a winemaker who loves to talk about his wines. Conceived by Fabio Stridi, the “Gros Dîner” is a new gastronomic rendezvous whose ambition is as simple as it is seductive: to shine the spotlight on Dardagny’s winegrowers through an experience in which each plate is conceived in resonance with the wines of the guest estate. For this first edition, the chef joins forces with Stéphane Gros. Present throughout the evening, the winemaker will share his story, his philosophy and several emblematic vintages from his estate, while also commenting on the pairings created for the occasion.

From aperitif to dessert, the menu is divided into several sequences. Focaccia to share, spicy gambas bonbons, ceviche of scallops with lemon, caviar and mild curry, carpaccio of Lake Geneva féra with white peaches and marinated chanterelles, risotto with fermented lemon and Thai basil, and wood-grilled Salers beef rib from Ferme de la Grange in Chancy will set the pace for the evening. A gastronomic score that Fabio Stridi obviously couldn’t imagine without a few nods to Italy. Beyond the menu, it’s the idea that really appeals. Putting a face to the bottles, listening to a winemaker talk about his craft between two courses, and discovering Dardagny in a different way. It’s a first edition that’s already whetting the appetite for the next.
