He hadn't told us a thing. As discreet as ever, Cyril Lignac was nevertheless preparing one of the most delightful surprises of this culinary season: his arrival at the helm of the legendary Lucas Carton on Place de la Madeleine in Paris.

We met him this summer to talk about his ice cream project. Cyril Lignac was, as usual, smiling, unassuming, humble, and down-to-earth. Not a word, of course, about what was in the works in Paris. And yet, what a surprise! It’s now official: Cyril Lignac is taking over the kitchen at the legendary Lucas Cartonon Place de la Madeleine.

Parisian institution

We had previously mentioned Benjamin Patou’s takeover of this Parisian institution. A restaurant steeped in history, inextricably linked to the great Alain Senderens, who turned it into one of the premier destinations of French gastronomy and left a profound mark on the art of food-and-wine pairings. For Cyril Lignac—chef, pastry chef, and tireless entrepreneur—this marks the beginning of a new adventure and further strengthens his foothold in Paris.

We are truly delighted by this news. Congratulations, Cyril Lignac, and above all, we send our best wishes to him and his teams as they embark on this new chapter. We can’t wait to see what happens next. See you starting September 25.
