In April 2026, Phaidon will publish Beyond Peaks, a book devoted to the cuisine and philosophy of Schloss Schauenstein, chef Andreas Caminada's three-star restaurant.

Spring is bright for Andreas Caminada. The publisher Phaidon will publish Beyond Peaks: The Cuisine of Schloss Schauenstein, a major work devoted to the culinary world of Schloss Schauenstein, a three-star restaurant in Fürstenau, Graubünden. Signed by Andreas Caminada and his chef de cuisine Marcel Skibba, with a foreword by Mexican chef Jorge Vallejo, Beyond Peaks unfolds in two complementary volumes. The first tells the story of a place and the people who shape it: producers, artisans, landscapes, gestures and raw materials. The second brings together a selection of seasonal menus, reflecting a cuisine that is precise, sensitive and deeply rooted in its territory. Conceived as a total work, the book also documents Schloss Schauenstein’s unique ecosystem, from its permaculture garden – the restaurant’s green heart – to its attention to objects, light and natural rhythms. Illustrated with photographs by Joan Minder, Beyond Peaks is aimed as much at cooks as at lovers of gastronomy as a living culture, and extends, on paper, the experience of one of the great contemporary places of the table.
