After Safre, Loris Vial is betting on Coin Coin

After breathing new life into Safre, Loris Vial continues to expand his business. The Geneva-based restaurateur is now taking over Coin Coin, a well-known destination among foodies. This decision is a natural extension of the work he has carried out in recent months at Safre. Buoyed by a successful 2026 vintage in the Banques district and supported by a team he now considers fully self-sufficient, Loris Vial wanted to devote himself to a new project.

Coin Coin quickly became the obvious choice. Charmed by the warm atmosphere of the place and its potential, the new owner quickly reached an agreement with the former owners to ensure a smooth transition. However, there are no plans to completely overhaul the establishment. Quite the contrary. The goal is to preserve its identity while further emphasizing its down-to-earth bistro vibe, centered around hearty, approachable cuisine designed for sharing.

Neighborhood Life

In particular, the project calls for the restaurant to be open seven days a week, with extended hours, in order to make Coin Coin a true hub of neighborhood life. At lunchtime, the menu will feature a deliberately streamlined seasonal selection, while in the evening there will be more emphasis on dishes to share and simple, unpretentious cuisine. Wines will also play a prominent role, in the spirit of a dining bar, with the aim of welcoming guests at any time of day—whether for coffee, lunch, a drink paired with a few small plates, or dinner with friends.

Finally, part of the current team will remain in place to preserve the spirit and traditions that have made Coin Coin a success. They will be supported by two colleagues from Safre, as well as new hires who will join the team. Before this new chapter begins, the restaurant will close its doors from August 1 through 23 for some renovations, with the goal of welcoming its guests in the best possible conditions upon reopening.
