A new chef at Pérolles
The story continues at the restaurant Le Pérolles in Fribourg, and what a story it is! Pierre-André Ayer, “Pierrot” to his friends, is handing over the reins of his restaurant to chef Victor Moriez, an indisputable figure in the world of Swiss toques and a colorful character (it’s impossible to forget the moment he spent with the chef in a portrait for the newspaper Le Temps). This talented and discreet chef, who previously worked behind the stoves of the Hôtel de Ville de Crissier and the Valrose alongside Benoît Carcenat, will take up his post at the beginning of October. Fans of the cuisine of the great Pierrot Ayer can rest assured that they will be able to continue tasting his dishes until February 2026, since, in accordance with the wishes of the Ayer family, the handover will take place subtly over the months to allow Victor to get his bearings and get to know the Fribourg clientele. A page is being turned for this fine family business, but the adventure continues. Contacted by telephone, Julien Ayer says he is delighted to welcome the new chef and looks forward to a bright future. “My father is the emblematic soul of our family home, and always will be. Victor’s arrival marks continuity and testifies to our desire to extend the story by writing new chapters at Le Pérolles. We look forward to returning and tasting the dishes that have left their mark on the minds of gourmets.
