Know-how, precision of execution and a subtle blend of flavors: Muhamed Muratovic, aka "Momo", sublimates Carouge through seasonal cuisine, between land and sea. Welcome to Sabi.

There’s something soothing about leaving the city center to wander the streets of Carouge. Far from the hustle and bustle of Rue Vautier, we push open the door to Sabia discreet establishment full of surprises. In an intimate, elegant setting, we take our seats at the table. Thomas Charruau, the conductor of our dinner, welcomes us and guides us through a selection of natural wines.

A judicious marriage

We follow Momo’s recommendations to better understand his world of taste, and begin our journey with scallops. Perfectly cooked, the scallops reveal a striking depth of flavor: diced chorizo, roasted pomegranate and hummus form an audacious marriage with the delicacy of the melting scallops. A starter that immediately whets the appetite, oscillating between spice, acidity and sweetness, where each element finds its rightful place.

Opting for a short menu offers creative freedom, and Momo understands this perfectly. At Sabi, products are carefully selected and finely worked. Between crab, trout, veal cheek or lamb, our choice falls on the latter. A rack of lamb, tender and pink to the core, accompanied by broccoli in two textures and melting gnocchi. The broccoli purée reveals the vegetable’s frank aromas, while the broccolinis add a welcome touch of crunch. A date purée softens the whole, while the gnocchi, with its deliberately neutral taste, imposes its texture. A true no-fault recipe!

Gourmet delights

It’s impossible to forget dessert after such a great start. On one side, a fruity and refreshing proposal: a roasted clementine accompanied by a vanilla cream, ideal for a light conclusion. On the other, a more gourmet plate combining chocolate mousse, peanut mousse and salted butter caramel, topped with intense dark chocolate puffed rice. Both desserts are enhanced by the choice of a fine bottle of sweet wine, carefully selected by Thomas Charruau.

At Sabi, each plate bears witness to a deep respect for the product and a technical mastery that is unostentatious. Momo’s cuisine is sincere and inspired, with precise gestures, the right combinations and a hushed atmosphere, accompanied by Thomas’s attentive and precise service. A Carouge address where you come to savor the moment, and leave with the desire to return…
