Thomas Fefin at EHL
From an early age, Thomas Fefin has been passionate about the hospitality business. After completing his studies in France, he left for Asia, where he stayed for 6 years. Kuala Lumpur, Macau and Canton, where he worked as a restaurant manager, held no secrets for him. But he wanted to return to Paris and take up the challenge of the palace world.
However, the professional reality in the capital was less attractive than he had imagined, and he only landed a position as chef de rang, but it was at the restaurant of the Le Bristol Paris hotel all the same! Working with Eric Frechon and manager Frederic Kaiser, who became his mentor, he quickly progressed to become head waiter. After 4 years of service, he embarked on a new adventure at Le Gabriel restaurant in La Réserve Paris, this time with Marco Tognon, who entrusted him with the position of assistant manager. In 2018, he earned the coveted title of Meilleur Ouvrier de France and was appointed restaurant manager in the process.
He spent the confinement period in Vallorbe, and in this natural setting he began to question himself. Within a month, he was hired as a lecturer at EHL, a position he has held since September 2020. His participative management style worked, and in September 2023, he added the position of manager of the restaurant Le Berceau des Sens to his responsibilities. In the dynamic environment of EHL, offering an infinite range of possibilities, Thomas Fefin is developing and implementing projects such as the Art of Service Trophy. See you in 2024 for even more surprises indoors!
