Nicolas Fernandez

If you’ve been to Suahoy recently, you’ve probably already met Nicolas Fernandez. Alongside Sandrine Pally and Yuttakan Pongkunsup, Nicolas is now the manager of the Thai restaurant on rue Prevost-Martin. Although he’s moved up the ranks, he’s still the barman, a role he’s particularly fond of. So don’t hesitate to enjoy a “sparkly” – gin infused with lemongrass, spiced liqueur, chili/kaffir syrup and Bitter Coriandre – while savoring a piece of Panang curry-braised pig cheek.
