After a decade of sommelier work in Michelin-starred establishments, Mathieu Quetglas recently joined the ranks of the Club des Amateurs de Vins Exquis. Having had the chance to see him at work at the Hôtel de Ville restaurant in Crissier and later at the Valrose in Rougemont, we’re delighted to welcome back this young, enthusiastic professional and his current favorite wine.
For this latest Food Bottle, Mathieu presents Les Vignes Oubliées by winemaker Jean-Baptiste Granier in the L’Épinard wine bar run by the truculent Jan Bertiaux. After this wine immersion tasting, we head for Saint-Privat in the Languedoc heights, where the soil is rich and the sun is intense. A wine you can either taste at Jan’s or order from Mathieu’s.
What an opportunity to share moments where the world of catering rubs shoulders with the world of wine in a relationship based on mutual respect.
