How fortunate we are to be able to count on a host of talented people in Switzerland. A wonderful breeding ground of men and women who generously share their knowledge and passion over the course of a tasting session. As you may have guessed, Bottle Food, now renamed Bottle Talk, is back. And to inaugurate this new chapter, who better than our dear Axel Caubet, from the Pompette winery, to talk to us about champagne?
During an interlude at Osteria della Bottega in Geneva’s Old Town – where chef Francesco Gasparro treats us to fresh parmesan pasta – this former sommelier, with his ever-singing accent and cheerful smile, tells us about and, above all, lets us taste Georges Laval’s Cumières 1er Cru 2022 vintage. A moment of sharing, sharing, pleasure and laughter. A cuvée that can be found in this warm Italian gastronomic stronghold, but also at Axel’s.
