The Sauvage bar duo
Léa Charbonney from Geneva and Mathieu Dormeau from Nîmes. One has been with us since the opening of Sauvage barthe other arrived in January 2025. Both have a background in Michelin-starred restaurants and a real desire for change. An operations manager and a head sommelier who have really found each other, and today form a united duo whose complementarity is obvious.

New energy
Together, they breathe a breath of fresh air into the Sauvage bar with a new menu, new energy and a new clientele. They imagined an establishment in their own image, where wine is adapted to all budgets and tastes. The kitchen, meanwhile, offers simple, seasonal dishes to share, celebrating local produce and conviviality. The menu evolves regularly, the wines by the glass are renewed, and customer feedback is taken seriously. Everything is designed to ensure that the experience evolves, adjusts and improves over time.
Their motto is that wine can’t go without gastronomy, and gastronomy can’t go without wine: “It’s a forced marriage that works extremely well,” says Léa. We drink a glass, share a plate, other friends arrive and we start again. That’s the spirit of the Sauvage bar, a big, happy table where you can enjoy the simple things in life. At the Sauvage bar, you’re on first-name terms, laughing with the neighbors, and coming to unwind after a hard day’s work and leave feeling lighter.

Wine selection
When it comes to selecting wines, Léa gives Mathieu carte blanche, who likes to have his say before approving a new find. They exchange ideas, taste together and advise each other. Each has his or her own preferences, but both share the same curiosity and desire for discovery. In the cellar, Mathieu prefers to focus on the winemakers who work behind the scenes to produce vibrant, sincere and absolutely excellent wines.
Le Sauvage bar is a place where you can drop in and feel “at home”. We love coming back, bonding and letting go. Léa and Mathieu transmit their energy to keep this place alive as an extension of themselves. A lively, human dining bar, attentive to its customers. A place of transmission, pleasure and sharing. A place to celebrate the simple things in life.
