Lucas Desbiolles at Le Flacon
Chef Lucas Desbiolles has been delighting us at Carouge’s Le Flacon restaurant for a year now. This talent, spotted by Gilles Blandin, Meilleur Ouvrier de France, has a wealth of experience behind him. From the Jules Verne in Paris to the Chat Botté in Geneva, he has evolved in a world punctuated by service and the long working hours associated with the profession.
Originally from Haute-Savoie, he draws his inspiration from the cooking of his mother and grandmother. Both passed on to him a passion for country dishes that tell a story. His father, a museum owner, has always passed on to him a passion for history as a whole. So it’s no surprise that the playlist he’s sharing with us today is tinged with nostalgia, featuring Betty Davis and Dusty Springfield.
