Guillaume Cottancin, our favorite food photographer, is back in Monday’s Food Letter, fitter than ever. Without missing a beat, he takes us to Chêne-Bougeries for a refreshing summer tasting. It’s at chef Paul-Etienne Cousin’s MAPO restaurant that he sets his sights and makes our mouths water with this appetizer based on tomato combined with peach and stracciatella. Enhanced with a verbena vinaigrette and cherry tomato pickles.
