Guillaume Cottancin
Photographer Guillaume Cottancin is a regular contributor to the Food Letter. For this spring edition, he takes his lenses to the land of Vaud, heading for the Fairmont Hotel in Montreux, where Lebanese chef Alan Geaam recently put down his kitchen knives and opened the Lemantine restaurant. For this magnificent photo, the chef concocted an Alpine salmon labneh with gravelax, sumac, peas and savory.
