Royal Savoy: Italy at Its Best
Italy takes its place at the top of the Royal Savoy. In Lausanne, the Sky Rooftop—which until now has featured various seasonal concepts—is now making “Cucina Italiana” a permanent fixture. With Lake Geneva and the Alps as a backdrop, the venue clearly asserts its transalpine culinary identity.
Italian Riviera
At the helm, Paolo Principe has crafted a menu inspired by the Italian Riviera, where classics take center stage: vitello tonnato, ossobuco alla milanese, and homemade ravioli del plin. The aperitivo menu follows suit, ranging from Negroni to Americano, while the wine selection spans the peninsula, from the Aosta Valley to Sicily, with a few forays into Ticino and several wines available by the glass.
A few floors below, the Brasserie du Royal retains its identity under the direction of Alexis Ribes. Brasserie classics are served alongside seasonal offerings, such as the creamy pumpkin and chestnut soup. At the Royal Savoy, fall is thus divided between Italian cuisine at the top and brasserie classics a few floors down.
