Roumier evening at the Café des Banques
The Café des Banquesin Geneva is preparing a confidential evening in partnership with Mathieu Vinsfeaturing Domaine Roumier, an absolute reference in Côte de Nuits. For the occasion, chef Yoann Caloué has devised a gastronomic menu with black truffles at its heart, to match a selection of the estate’s emblematic cuvées. The menu begins with an aperitif of foie gras, caviar, truffle arancini and crabmeat, accompanied by Pierre Péters Blanc de Blancs grand cru champagne. Dinner continues with a pithiviers of foie gras, Nant d’Avril poultry and black truffle, served with two Chambolle-Musigny 2017 and 2018. Plin ravioli with truffle and ricotta will then dialogue with a 2012 Chambolle-Musigny1er cru Les Cras and a 2012 Bonnes-Mares Grand cru. The main course, Black Angus beef with truffled mousseline, is paired with a Morey-Saint-Denis1er cru Clos de la Bussière 2020, before a truffled Brie from Bruand paired with the 2022 vintage of the same wine. The evening concludes with a surprise by Christophe Roumier. An exceptional moment that promises finesse, precision and emotion, at the meeting of a legendary estate and a Geneva table that’s still unmissable.
