Romain Meder, former right-hand man to chef Alain Ducasse at the Plaza-Athénée, announces the forthcoming opening of his Paris restaurant.

As soon as the news was announced on the networks, I couldn’t help but smile, as I have such wonderful memories of my interview with this humble, unassuming character. A former leader of Alain Ducasse’s visionary (once again) gastronomic journey towards naturalness, Romain Meder returns to the forefront of the French culinary scene. At 34 rue Saint-Dominique, in the Garance restaurant, this exceptional chef will be rewriting new culinary pages. Let’s hope it’s soon…. well, by 2025 anyway. In the meantime, let’s take a look back at some of his past creations, such as sea urchin in a potato and red onion broth, accompanied by wakame seaweed from Brittany. Escorted by slightly crunchy chickpeas and covered with a film of caviar, the starter offered a play of flavors, temperatures and smooth, gelatinous textures. All we can do now is wait for his restaurant to open… We wish Romain Meder every success in this new adventure.
