It’s done! We finally know the winner of the 2025 edition of the 50 Best Restaurants. Maido, a Lima-based restaurant run by chef-owner Mitsuharu ‘Micha’ Tsumura, has been named The World’s Best Restaurant 2025, succeeding the 2024 winner, Disfrutar in Barcelona, which is now part of the Best of the Best hall of fame. RankedNo. 5 in the 2024 list, Maido is a true example of Nikkei cuisine, blending meticulous Japanese techniques with authentic Peruvian ingredients to create a culinary experience that is both culturally rich and innovative. The restaurant takes its name from a Japanese expression used to greet people: ‘Maidothe very first word guests hear when Chef Micha’s team gives them a warm welcome. More than fifteen years after its creation, Maido remains true to its founding philosophy, showcasing the finest local ingredients, adapted to the seasons, in a tasting menu of more than 10 courses. Maido is followed in the rankings by Asador Etxebarri (No. 2) in Atxondo, Spain, and Quintonil (No. 3) in Mexico City.
