Kei Shiogai at Inda-Bar
Some evenings are unmissable, almost never to be repeated. In Geneva, the Inda-Bar will host a unique, precious, almost whispered moment: for the first time, winemaker Kei Shiogai will be present in person. An exceptional visit that promises an evening on the theme of wine, turned towards that form of friendship that is born around a well-prepared table. As wine lovers know, such a visit is an absolute exception. Morad El-Hajjaji, the owner, and Jewel Rholam, his winemaking partner, have created an incredible journey. Jacques Selosse’s Champagne Initial will open the ball, before a Puligny-Montrachet1er cru Chalumeaux 2022 accompanied by red tuna saku, yuzu-ponzu and osciètre caviar. This will be followed by Pommard 2021 and Pommard Poisot 2022 with sesame and lemongrass-scented gyozas, then Gevrey-Chambertin Baraques 2021 and Gevrey-Chambertin1er cru Cherbaudes 2022 with white truffle risotto and roasted scallops. The heart of the evening will be revealed with a duo of Charmes-Chambertin grands crus 2021 and 2022, echoing a piece of beef roasted with Binchotan and enhanced with a black truffle reduction.
