HUMM, a family-friendly restaurant in New York
Daniel Humm is set to open a restaurant bearing his name. According to the Financial Times, HUMM will welcome its first guests on October 10 at 435 Hudson Street in New York City’s West Village, at the site of the former EN Japanese Brasserie.
Roast Chicken
The Swiss chef at Eleven Madison Park explores a more casual style of cooking here, centered around a wood-fired stove and the joy of sharing. On the menu, his mother Brigitte’s roast chicken—topped with Parmesan and brioche tucked under the skin—is served with a potato gratin that evokes his Swiss roots. Focaccia, grilled fish, and seafood round out the menu, where vegetables take center stage.
Art is also among the guests. Pierre Yovanovitch designed the interiors, Francesco Clemente adorned the ceiling with a celestial fresco, and works by Rashid Johnson, Louise Bourgeois, and Roni Horn accompany the guests. At the heart of the space, a monumental ceramic oven serves as a reminder that fire is also central to the kitchen.
Following Eleven Madison Park’s plant-based ambitions, HUMM reveals another side of Daniel Humm: that of a chef returning to a more personal style of cooking, inspired by memories, fire, and sharing.
