After winning his third star earlier this year, chef Hugo Roellinger was named Chef of the Year at the 39th edition of "Le Chef" magazine's Trophées.

I was blown away after my visit to the restaurant Le Coquillage restaurant in April 2023. My dinner was much more than a simple tasting and sequence of culinary creations, it was a gastronomic pilgrimage where sea, earth and man came together. I’m not surprised to see all these distinctions raining down on a place and a family of rare discretion and humility. Twenty years after his father Olivier, Hugo Roellinger has been crowned Chef of the Year 2025. Trained by such greats as Michel Bras, Michel Troisgros, Pierre Gagnaire and Michel Guérard, Hugo Roellinger offers a marine and plant-based cuisine in which spices play a central role. A richly deserved reward not only for the 37-year-old chef, but also for the entire team who follow him and carry his gastronomic message on a daily basis.
