After nearly ten years at the helm of Fabbrica Pasta, Enzo Cianci is handing the restaurant over to two young chefs. The chef is now setting up a workshop entirely dedicated to the artisanal production of pasta.

Fabbrica Pasta is changing hands. Salvatore Cappuccio of Italy and Andrés Alejandro Chaparro of Mexico are taking over the restaurant, where they will preserve its spirit and concept while adding their own personal touch. Starting at 5 p.m., they will offer aperitifs with tapas, among other things.

Artisanal pasta

For Enzo Cianci, this transition marks the beginning of a new chapter. During the COVID-19 pandemic, when stores were running out of pasta, the chef began producing and selling his own fresh, artisanal pasta. This passion led him to win the World Pasta Championship in 2021 and 2022, before expanding his business to supply restaurants, hotels, grocery stores, and chefs.

Together with his partner Martina, he is now creating custom signature pastas, experimenting with shapes, fillings, and colors using natural, preservative-free ingredients and prioritizing local ingredients and flours. The duo is now setting up a workshop dedicated to artisanal pasta-making, featuring an open production area and direct sales to consumers, while continuing their collaborations with professionals. More details will be revealed soon.
