Champagne, harmony and effervescence at Safre
Wednesday, November 12, Safre will be dressed in bubbles for an evening dedicated to champagne, in collaboration with Axel Caubet from Chez Pompette. Behind the stoves, brand-new chef Oscar Dessolis will sign a five-course menu designed as a gourmet invitation to meet the great independent winegrowers from the four corners of Champagne. On the menu: crunchy Jerusalem artichoke, shrimp ravioli with cockles and lime, sea bass with fennel, veal and oyster with an iodized veal jus, before a fresh finish with lemon and champagne. The featured bottles – Reflets de Rivière by Goutorbe-Bouillot, Cuvée Perpétuelle by Bonnet-Ponson, Clos du Château 2019 by Les Tuileries, Bistrotage Base 2020 by Charles Dufour and Corps Simple 2022 by Patis Pluriel – will accompany each plate in a pairing designed to reveal the personality of each terroir. Ahead of the evening, a free tasting, again orchestrated by Pompette, will bring together the winemakers between 3:30 and 7pm on the restaurant floor. A great opportunity to toast, exchange ideas and (re)discover living Champagne.
