The capon at Café des Banques

With a Café des Banques packed to the rafters with epicureans eager to sample gourmet cuisine, Yoann Caloué has clearly succeeded in his culinary integration into downtown Geneva. At 6 rue de Hesse, we meet up with the members of this brilliant team, all of whom are committed to the cause of the former chef of Le Flacon, who unveils, in this festive season, his fearsome gnocchi, this time accompanied by a butternut and stracciatella coulis. But it was with a more classic dish that I let myself be tempted: a capon and its jus court, accompanied by chard risotto, roasted salsify and an airy potato mousse; each mouthful providing a tasty foretaste of Christmas.
