Knut Schwander, who has been in charge of the famous guide in French-speaking Switzerland for the past 20 years, looks back on the new 2022 edition of GaultMillau, launched today.

A discreet, elegant figure, the owner of the gastronomic guide has a calm, collected demeanor. For the past two decades, his mission has been to scour the four corners of French-speaking Switzerland incognito, in search of the next gastronomic nuggets. Alongside a score of anonymous agents, he has the onerous task of promoting quality addresses in our beautiful country, or possibly downgrading them. Who knows, one day you may have been sitting next to him at lunch, without knowing that this affable man is the rainmaker of our culinary universe. At a time when the catering sector has suffered the full force of the health crisis and the spectre of Covid-19 still looms large, here’s a summary of an edition that has been released under high tension.
