Pithiviers & Sommelier
It’s one thing to prepare hamburgers or assemble salads, but quite another to know how to grill a turbot to perfection and have the audacity to pair it with a Grenoble garnish, usually exclusively dedicated to skate wing. It’s one thing to heat up pre-packaged sauces and clear your name by displaying labels of quality on your doorstep, but quite another to offer duck pithiviers, foie gras and porcini mushrooms, or a lamb shoulder confit cooked at low temperature for hours. It’s one thing to believe that you can run a restaurant without any knowledge of the trade and without any notion of service, but it’s quite another to know your customers’ habits and manage their whims while keeping a smile on your face. It’s one thing to give a vague introduction to a Pinot Noir or a Syrah, but quite another to know the world of wine and take the trouble to pass the Master of Sommelier exam.
Sincerity
That’s YEAST: a merchant of happiness where the product is king! There’s no filter in this space dedicated to epicureanism, which doesn’t pretend to be anything other than what it is. Bérangère and Bertrand Lutaud welcome guests in a relaxed, cheerful atmosphere in the heart of Carouge. Even if this apparent lightness accompanies the guests during service, the couple’s rigor and intransigence are the order of the day. At this level of culinary honesty, it’s hard to cheat… especially when the duo trained at Crissier’s Hôtel de Ville. The cuisine is unadorned, thanks to the quality of the produce, intelligent, thanks to the knowledge of the chefs, and gourmet, thanks to the love of the trade that the couple communicate. There’s an inexplicable feeling of affection when you step in the door. Could it be a form of post-Covid-19 benevolence? No. Their honesty and sincerity move us… especially in an over-mediatized culinary world where social networks and reality TV paint a picture far removed from the prevailing reality.
YEAST offers a dose of realism in a gastronomic world sorely lacking in it. Here, there’s no need for showmanship or artifice… the real thing wins out and reconciles us with life!
