Le Pont de Brent continues to charm guests with its lakeside and local inspiration.

AWARDS AND DISCRETION

It goes without saying that Stéphanie & Stéphane Decotterd form an inseparable tandem. Perched on the heights of Montreux, just a stone’s throw from the village of Bloney, their double Michelin-starred restaurant is masterfully run. She’s in the dining room, he’s behind the stoves, and the magic happens every time. Stéphane refocuses his cooking on the region and local produce. Stéphanie concentrates on the front of house, winning the trophy for best service at the Guide Rouge ceremony at the beginning of the year. The awards keep coming, but her discretion and humility remain. They are aware that certain decorative elements of the restaurant, which is divided into two rooms, need to be modified. A house takes care of itself, and things improve with time, which has no effect on the gracious smile of the lady of the house, nor on the grateful gaze of her husband, who is constantly on the lookout for renewal.

SUBTILE CARD

At first glance, the card seems classically inspired. Then it subtly asserts itself, more innovative and discreet… just like its creator. You only have to read between the lines to realize that the dishes are very much in tune with the times. The chanterelle fricassee in tartelette with smoked eggplant and flouve sabayon is a foretaste of an almost autumnal symphony. To keep with the theme, the frogs’ legs are accompanied by Marasmes des Oréades (mousserons) and a sparkling broth with ground ivy and verjuice.

ARCTIC CHAR

It’s impossible not to honor the Arctic char, a true ambassador of the lake, gently and dexterously carved in the dining room by Stéphanie Decotterd. All washed down with an incisive yet delicious beurre blanc with herbs. A magical moment! After hesitating for a long time over the Valais apricots and their Baba soaked in Abricotine, our hearts fell for the tarragon-scented raspberries and their little cabbage.

THE WORD OF HUNGER

There’s no point in talking at length, you’ve just got to savor it. The Brent Bridge magic formula works with subtlety and wisdom. Perhaps it’s even time to loosen the reins a little…
