Out goes Laurent Wosniak, in comes David Devel! Michel Roth's new right-hand man makes his mark at the Michelin-starred Président Wilson restaurant.

MERCATO

Needless to say, the hotel has remained, as usual, very discreet about this recent Mercato of chefs. While Laurent Wozniak took over the helm at the Palace de Menthon on the shores of Lake Annecy, the young but experienced David Devel took up the challenge at Bayview, the gourmet stronghold of MOF Michel Roth.

EXPERIENCE GUY SAVOY

At almost 35 years of age, this chef with the air of a young first is no novice. In 2005, the young apprentice took part in the Olympiades des Métiers competition, becoming French champion and taking third place worldwide. He returned to Guy Savoy (still on rue Troyon) as a commis, before leaving again as executive chef. “My guiding principles in my career have always been stability and loyalty. After 14 years of loyal service, experience of service at the highest level, 35 people to manage on a daily basis and some 60 place settings, the chef is ready to begin a new chapter in his professional life. SECOND STAR

What does he have in store for us? While bringing a new impetus, he knows that we mustn’t rush things either. But the objective is clear: to earn a second star. Rigor and consistency are the watchwords the chef wants to impose on his brigade. What’s on the agenda? An autumn transition period that reveals the chef’s ambitions in two stages. A pike soufflé should be on the menu this week. Accompanied by a cauliflower purée escorted by white truffles (the season is early), topped with a chestnut emulsion. Gourmet delights guaranteed! David Devel has not forgotten the lake, and is already looking forward to offering Arctic char and fera, which he plans to pair with foie gras. Quite a program… see you soon for the tasting.
